3 Recipes from Teresa Giudice’s Cook Book

“Fabulicious  Fast & Fit”

So today my husband says to me to go thru Teresa Giudice’s book and pick a few recipes for dinner-so he  looks thru it and decides he wants

Naked Chicken Parm

This is what it takes to make this one

2 teaspoons extra-virgin olive oil
4 boneless chicken breasts
1/2 teaspoon of salt
1/4 teaspoon of pepper

Preheat the oven for 350
Heat 2 teaspoons of olive oil in fry pan on medium heat. Season the chicken with salt and pepper. Add chicken to the fry pan and cook until each side is brown
Pour the gravy into a 13 x 9 pan-keeping enough to cover the chicken breasts as well….once you lay the chicken on top of the gravy, then you cover them with remaining, add your locatelli cheese and mozzarella cheese
Bakes for 15-20 minutes in the oven
Then it calls for you to make her quickie gravy which is the following (I made the chicken and the gravy at the same time)

Quickie gravy
1 tablespoon of extra virgin olive oil
1 can (28 oz) Italian plum tomatoes with their juices chopped
1/4 cup of tomato paste
2 tablespoons of chopped basil

all of which I did however I added locatelli cheese to it as well

make the sauce, heat the oil in medium sauce pan, over medium heat. Add the tomatoes and their juices with the tomato paste. Bring just to boil then reduce to simmer, add basil and stir in (which is when I added the cheese), turned on low and let simmer while the chicken finished.

Then in the interim I had suggested Faux Fettuccine Alfredo with Broccoli

So while everything was finishing on the stove I went and got my large sauce pot in which I put two boxes of fettuccine cause had to do one plain for our daughters for dinner.

For this I took one bag of broccoli florets and steamesd those
cooked up the fettuccine accordingly
you take 1 tablespoon of olive oil
2 garlic cloves minced
2 tablespoons of flour
2 cups of fat free milk
2 ounces of reduced fat cream cheese
1/2 cup of grated parmesan cheese
1/4 teaspoon of salt
1/4 teaspoon of black pepper

bring large pot to lightly salted water to boil over high heat. Add broccoli and cook until tender. Add pasta to water and cook according to directions

Meanwhile make the sauce….which you want to be finishes by the time that the pasta is cooked. Heat oil and garlic together in medium saucepan. Medium heat until the garlic ias softened. Add flour, gradually whisk in the milk. Pour the milk mixture into the saucepan and bring to simmer, whisking often. Reduce the heat to low, remove from heat then add the cream cheese and parmesan cheese until smooth. Drain pasta and then add sauce, broccoli and mix in large bowl together.

The Finished Dinner…………

Everyone loved it and couldn’t have been happier
